"Hamburger" Soup
1/2 pkg of Yves Veggie Ground Round (original)
2 large carrots (chopped)
1 yellow onion (chopped)
2 celery stalks (chopped)
1 large green pepper (chopped)
2-3 cloves garlic
2 cups water + 1 veg broth cube(low sodium) OR 2 cups vegetable broth
1 28oz can diced tomatoes (no salt added)
1 8oz can tomato sauce (no salt added)
1/2 cup Quinoa
2 bay leaves
1 tsp Oregano (add more if using unseasoned tomatoes)
Pepper and Salt to taste
Directions:
In a very large pot, line the bottom with water and saute garlic for 1-2 minutes. Add carrots, celery, onion and peppers, saute for a few mintues till they start to soften. Add ground round, broth, tomatoes, tomato sauce, quinoa, bay leaves, oregano, pepper and salt. Bring to boil, then simmer for about 20 minutes until quinoa is cooked. Remove bay leaves
